Flattening draws your answers directly onto the page and removes the interactive fields. The values can no longer be edited, which is useful when sending a final copy.
The document has no interactive AcroForm fields — it is either a flat document or a scan. A form you can only type into in Acrobat's 'Fill & Sign' mode is not a real form field.
